Autumnal Equinox ~ Change of Season !

The Autumnal Equinox this year falls on 22nd of September 2010 in the Eastern Hemisphere. During this time the Sun moves in the northern hemisphere southwards crossing over the celestial equator.

This is also a holiday, known as Mabon, a Sabbath. A Sabbath is considered a high holy day or a day of power. Mabon is one of eight of the seasonal celebratory days in which Pagans and Wiccans celebrate on the wheel of the year.

Mabon is seen as the second harvest of the year and it is also when gardens are in full bloom and full of the bounty of nature.
It is thought of as the ‘Pagan Thanksgiving’ where they celebrate the passing of the year and in turn give thanks for everything they have been given.

Inspired by the Changing  Season:

Autumn is in the air .. this creation was inspired by the cool nights .. the scent in the house was just yummy.!

Ingredients :
– 1 Egg Plant
– 1 Butternut Squash
Р3 Yams (medium size)
– 3 Yellow Squash (medium size)
– Garlic 8 – 10 cloves – chopped

Spices:
– salt to taste
– pepper fresh ground
– nutmeg
– paprika
– cinnamon
– extra virgin oil olive
– Organic Chicken broth

Prep work : ¬
–¬†wash all the veggies
– Peal the garlic cloves, egg plant & butternut squash
(the skin is just to tough).


–¬†cut into nice size cubes¬
(remember they melt down 
 so make them a nice chunky size).
¬
– place chunks in large roasting pan
– season with the above spices to taste
– sprinkle oil olive then toss to coat
– add enough Organic Chicken broth to cover bottom of pan

Roast at 375 – 400 degrees for 1 1/2 hours approximately.
(check to be sure they do not burn )

The scent delicious of the spices will permeate the house .. cozy comfy and delicious on a cool Autumn
or winter night.¬
